Pumpkin.


I was planning on making a pumpkin streusel cake for Thanksgiving, but then I ran out of time. Now I have lots and lots of roasted pumpkin to use up. (You can't buy pumpkin puree here.)

I've already make pumpkin muffins, pumpkin bread, and tonight I'm making a pumpkin-black bean-chipotle soup for dinner. I can't wait. But I still have half the pumpkin left!! Please please please leave me a comment with your favorite recipes using up lots of pumpkin!

The pumpkin bread, though. So good. I used Celine's recipe. I followed it almost exactly-- the only changes I made were decreasing the sugar to 2 tbsp and I using oil instead of margarine. This bread is great. It's a gorgeous shade of yellow, subtly pumpkin-flavored, and good with both sweet and savory spreads.

(I hate my oven, though. Actually, I don't have a proper oven, just an oversized toaster oven that heats only from the top. See how the top of the loaf is nice and risen, and the bottom is dense and un-risen? I suspect this is due to said oven, because this never happened when I made bread in a proper oven. It still tastes good, but it's annoying.)

That bread is such a pretty color! What muffin recipe did you use, by the way?

Some of my favorite ways to use pumpkin are in chili, soup, stews, and, of course, baked goods! Good luck using it all up--I think it should freeze pretty well, though, if you want to save it for later...

Haha! I have the same problem. Canned pumpkin doesn't exist in Australia!

My favourite pumpkin recipes. Hmm I adore black bean and pumpkin burritos (or is it enchiladas? You know the one's you put in the oven and cover with salsa and cheeze?)

I also like creamy pumpkin sauce on gnocchi or pasta with a bit of sage.

And VwaV pumpkin waffles are amazing! Just like the muffins....only waffles!

I think your bread looks fabulous!! I love anything with pumpkin in it - even when it's NOT this time of year :0)

I have a recipe for a Pumpkin-Pecan-Raisin loaf (which I've featured on my blog), as well as a Pumpkin-Raisin Muffin recipe. Both of these recipes are winners, and a surefire way to use up extra pumpkin!

You could try the double-layer pumpkin cheesecake on Susan's FatFree Vegan blog...It doesn't use much, but it's omni-friendly if you have folks to share with...There's also her pumpkin spice bread, which looks yummy.

Or there's the NY Times recipe for pumpkin, white bean and kale ragout.

Do you drink coffee? There is a pumpkin spice latte recipe on my site that uses pumpkin puree and is super duper delicious. :)

Hmm... what else pumpkin do I have. I think the other recipes I've posted are vegan pumpkin currant cookies & pumpkin muffins. Have you searched allrecipes.com? I often find good things there, or on epicurious.com & foodnetwork.com.

hmm... I love pumpkin. Your bread looks delicious! I have made Pumpkin oatmeal cookies, the recipe is from vegan with a vengeance I think. Also, you could also do the classic, pumpkin pie. or pumpkin chocolate chip cuppers from vegan cupcakes take over the world. yum! if you aren't wanting too many sweets, maybe try making a stew or a creamy soup or even pasta. I think Urban Vegan recently posted a gnocchi recipe using sweet potato, but you could probably sub in pumpkin.

that bread is gorgeous, uneven heat and all! you know what would be good? I saw a recipe somewhere for pumpkin bread pudding... but I don't know where. Basically, use a bunch of pumpkin puree, some (pumpkin?) bread, some milk, some sugar, some vanilla and/or liqueur of some sort, and voila! Maybe some nuts and raisins? Can you tell it's way too early in the morning here...?

This probably won't help at all, but we were dog sitting for friends last week who have a doggy with tummy trouble. The vet told them to feed the dog pumpkin. Don't know why...
We did it, and had no tummy issues while in our care.
